Sausage Rolls

My family is loaded with great cooks and each has a favourite thing they excel at. I wouldn’t say sausage rolls were mine but they’re quick and easy when you want a savoury for a get together. For Marion in Keeping Up Appearances, cooking sausage rolls was not only her forte she often baked to distract herself from life’s difficulties. She made plain sausage rolls and chicken sausage rolls and I knew readers would want the recipes. My daughter and I took out our favourite recipes and fine tuned them to create – Marion’s Sausage Rolls Recipes. I’m sharing them below so that you can enjoy them too.

Marion’s Sausage Rolls
Ingredients
500 gms sausage mince
80 gms fresh breadcrumbs
1 onion grated
2 tbspns Beerenberg Burger Relish (Scotty’s)
1 egg lightly beaten
3 puff pastry sheets
1 egg extra for basting
Method
Heat oven to 200˚ C
Spray oven trays lightly with olive oil and wipe with paper towel or line with baking paper.
Heat some olive oil in a small fry pan and gently cook onion for a few minutes to soften.
Add mince, breadcrumbs, onion, burger relish and lightly beaten egg to a large bowl and mix thoroughly with hands.
Cut a pastry sheet in half.
Brush egg onto one long edge of each half.
Spoon mixture along opposite edges. (Takes up approx. one third of pastry)
Roll up and brush top with egg.
Cut roll in half, then in half again then each into halves again to make 8 equal bite size sausage rolls. Makes 4 dozen altogether.
With a sharp knife scratch two lines across top of each.
Cook 25-30mins until golden brown.

Chicken Sausage Rolls
Ingredients
500 gms chicken mince
40 gms fresh breadcrumbs
1 onion finely chopped
I clove garlic crushed
¼ cup grated parmesan cheese
1 tbspn dried mixed herbs
1 tbspn sweet chilli sauce
1 tbspn barbecue sauce
1 tbspn tomato sauce
½ tbspn worcestershire sauce
1 egg lightly beaten
Couple of shakes of salt and pepper
3 puff pastry sheets
1 egg extra for basting
Sesame seeds for top
Method
Heat oven to 200˚ C

Sprinkle with sesame seeds.
Cook 20-25mins until golden brown.
